Black Bean Cookies

It's chocolate...it's a cookie...that is all they need to know!!

On that note...shall we get started????

Ingredients:

    1-15 oz. can of black beans (or cooked 1/2 dried black beans to equal 1 can)
    4 oz. bittersweet chocolate
    1 cup whole wheat flour
    1 cup white flour
    3/4 t baking soda
    3/4 t baking powder
    3/4 t salt
    6 T butter, softened
    1/2 cup of sugar
    1 egg
    2 t vanilla extract
    4 oz. semi sweet chocolate 



Got your ingredients????  Good.
Is anyone around? No? Good....now let's make these cookies.







Take the Black Beans and drain, rinse, and puree with 1/8 cup of water in a blender of food processor or blender.














Cut SEMI SWEET chocolate into small chunks.

Melt the BITTERSWEET chocolate and cool slightly(Sorry forgot to take pic)













Add cooled chocolate to pureed beans. Mix until blended.















Preheat oven to 375 F.
Mix together dry ingredients: flours.













Add baking soda, baking powder, and salt and set aside.










In a large mixing bowl with an electric mixer, cream together butter and honey for 1-2 minutes until light and fluffy
















Add egg and incorporate well.















 Mix in vanilla extract.
















Add black bean puree and cooled melted chocolate mixture to butter mixture and mix well.














Mix dry ingredients into the chocolate/black bean mixture in about three additions until cookie dough just comes together.  Finish mixing with a wooden spoon.














Stir in chocolate chunks and drop by tablespoon onto parchment lined baking sheets(I lightly greased my cookie sheets with PAN GREASE)
Bake at 375 F for about 8-10 minutes.  (Don’t over bake or they will get dry.)




Cool completely on wire racks. OH THE TORTURE!!!!!!!!!  WHEN WILL IT END?!?!?!?!?!?!?

2 Ingredient Ice Cream

IT'S HOT!!!!!!!!!!!!!!!!!  All over the country everyone has been SCREAMING that it is hot so.............

YOU SCREAM

WE ALL SCREAM FOR...........................


ICE CREAM!!!!!!!!!!!!!!!!!!!!!!

But let's face it sometimes it can be a hassle to make homemade ice cream but today I will show you a so easy a monkey can do it ice cream recipe.

OK Have I peeked your interest????

Ready, set..................... go gather your ingredients and equipment.

You will need:
1 14oz can SWEETENED CONDENSED MILK..not evaporated milk (I used homemade sweetened condensed milk)

1 liter of SODA, the flavor is up to you, we like the Cherry Limeade Soda found at WalMart

Ice Cream Maker

Ice(If you have an older machine)

Rock/Ice Cream Salt (If you have an older machine)














Step 1: Add Sweetened Condensed Milk into machine container 











Step 2: Add soda to machine container
















Step 3: Add paddle to container












Step 4: Cover container and pace in machine













Step 5: Turn on machine and add ice and salt to the buck and process 40 to 60 minutes.  When done it will be like soft serve. You can serve it now or put in the freezer for later. Please note that this ice cream will get a "sandy" texture the colder it gets, but fear not it is still good when it gets that texture.








Step 6: Grab the whole container and RUN!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! or be nice and serve everyone a dish.

Easy Peasy Rice Pudding

Do you like rice pudding but hate all the mussin and fussin involved with making it????  Well then this recipe is for you.  All you need is a crockpot, a spoon, and the ingredients.  Sounds easy huh?

So lets get started, first lets gather up what we shall need:
These ingredients can be cut in half if you have a smaller crock pot(I have a small 1.5 quart I make mine in)
EQUIPMENT:
Crock Pot, at least 2.5 quart
Measuring cup
Measuring Spoons

INGREDIENTS:
1/2 tsp. cinnamon
1/4 cup chopped, dried apricots (optional)
1/4 cup dried cranberries or cherries (optional)
1 tsp. vanilla
Pinch of salt
3 Tbsp. cold margarine(I used Squeeze butter because that is all I had on hand)
1 cup sugar
1 cup uncooked rice
2 qts. (8 cups) vanilla soy milk(I have also used homemade Rice Milk...RICE MILK RECIPE and homemade Oat Milk, if lends a slightly different taste, ALL GOOD)





OK have you gathered everything???
Good now lets start.................












Step 1: Pour milk into Crock Pot












Step 2: Add Rice
















Step 3: Add salt












Step 4: Add sugar












Step 5: Add Cinnamon












Step 6: Add vanilla













Step 7: Add butter









Step 8: Add dried apricots (Sorry no pic, family doesn't like dried apricots)
Step 9: Add dried cranberries or cherries(Sorry again about no pic, family doesn't like dried cranberries or cherries)




Step 10: Stir well 











Step 11: Cover Crock Pot  













Step 12: Cook on HIGH for 1.5 to 3 hours or until desired thickness is achieved, stirring every hour.















Step 13:  After cooking you can either serve warm or refrigerate until cold. We like our cold so into the fridge went the Crock Pot. 

Oh the agony of waiting........................................

















After it is good and cold, that is if you like it cold, the torture is over!!!!!!!!!!!!!
